Indian Corn Casserole



2 lbs. lean ground Beef
1 tbs. Vegetable Oil
2 chopped Onions
3 chopped Garlic Cloves
1 tbs. Chili Powder
1 tbs. crushed Red Pepper
4 ears Sweet Corn
28 oz. diced Tomatoes, one can
1 cup Beef Broth
2 tbs. cornstarch

Brown ground beef in skillet. Add onions, garlic, chili powder and red peppers. Cook and stir until onions are soft.

Mix together broth and cornstarcth until smooth. Add to skillet with tomatoes. Stir until mixture comes to a boil and is thickened. Remove kernels from 2 ears of corn and add to beef mixture. Cut remaining ears of corn into 1-inch thick slices and add to mixture. Simmer, covered, for 20-25 minutes or until corn is cooked. Season with salt and pepper to taste.
